PINEAPPLE
CRANBERRY
SALSA
(Fran Shinskie)
1 can (15 ¼-oz) Del Monte crushed
pineapple in its own juice 1 Tbs. grated fresh ginger root
(or ½ tsp. ground) 2 cloves garlic, minced 1 tsp. grated
orange peel ½ tsp. ground allspice 1/8 - ¼ red pepper
flakes, to taste 1 can (8-oz.) whole berry cranberry
sauce 1/3 cup sliced green onions (optional) 2 tsp.
fresh lime juice
Drain pineapple, reserving juice. Pour
juice into saucepan. Add ginger, garlic, orange peel, allspice
and red pepper.. Cook over medium-high heat about 8 minutes.
Stir in pineapple, cranberry sauce, onions and lime juice.
Serve warm or at room temperature. Makes 2 cups.
