Blueberry Coffee Cake (Kathy
Bruce)
¼ cup butter ¾ cup white sugar 1 egg ½ cup
milk 2 cups all-purpose flour 2 tsp. baking powder ½
tsp. salt 2 cups blueberries ½ cup brown sugar 3 Tbs.
all-purpose flour 1 tsp. ground cinnamon ½ cup chopped
pecans 3 Tbs. butter
Grease and flour a 9"
springform pan. Sift together flour, baking powder and salt.
Set aside. Ina a large bowl, cream together butter and sugar
until light and fluffy. Beat in egg. Beat in flour mixture
alternately with milk, mixing just until incorporated. Stir in
blueberries. Pour batter into prepared pan. In small bowl,
combine brown sugar, 3 Tbs. flour, cinnamon and chopped
pecans. Cut in butter until crumbly Sprinkle over batter. Bake
in preheated 375°F oven for 40-45 minutes or until toothpick
inserted into center of cake comes out clean. Allow to
cool.
