CHEESE, ONION & TOMATO FLAN (Jane McDaniel)

1/4 cup lard
1 1/8 (5 oz.) flour
1/4 cup water
1 medium onion, chopped
1 oz. butter or margarine
4 oz. Cheddar cheese, grated
2 eggs
1/3 pint milk
1 tsp. French mustard
Salt & pepper to taste
1 large tomato

Make pastry from first 3 ingredients. Roll out pastry and use to line a 7 1/2" flan tin. Melt butter and sauté onion until transparent. Allow to cool slightly, then sprinkle over base of flan. Sprinkle cheese on top. Beat eggs, milk, mustard, salt and pepper together and pour into flan case. Arrange sliced tomato around outside edge and bake in oven at 350F for 40-45 minutes, until set and golden. (From
