CHICKEN ARUGULA ROLL-UPS (Michael & Lyn Belisle)

Roll-ups:
2 chicken breasts, grilled, cut into strips
1 bunch arugula leaves
2 poblano peppers, roasted, cut into strips
flour tortillas, quartered lengthwise
Dipping Sauce:
1/2 cup mayonnaise
1 Tbs. horseradish
1 Tbs. honey mustard
1-2 tsp. dill weed
juice of 1 lime

Place arugula leaf on tortilla, top with pepper strip and chicken strip. Roll up and secure with toothpick. Serve with dipping sauce or with your favorite salsa.
