GREEN BEANS SUPREME (Tom Collins)
½ cup onion,
sliced 1 Tbs. minced parsley 4 Tbs. butter 2 Tbs.
flour 1 tsp. salt ¼ tsp. pepper ½ tsp. grated lemon
peel 1 tsp. oregano 1 tsp. basil 1 cup sour
cream 5 cups canned green beans, drained ½ cup grated
American cheese ½ cup dry bread crumbs
Cook onion
and parsley in 2 Tbs. butter until tender but not brown. Add
flour, salt, pepper, grated lemon peel, oregano, basil, and
sour cream; mix well. Stir in beans; heat and stir. Turn
mixture into casserole or shallow baking dish and top with
grated cheese. Melt remaining 2 Tbs. butter; combine with
bread crumbs and sprinkle over beans. Bake at 350F for 30
