Fiesta Corn Dip by Linda Skop, San Antonio Fiesta Commission
2 Cans Mexican Corn, drained well
1 Can Rotel tomatoes, drained really wel1/2 red onion, chopped
8 ounce package shredded cheddar cheese
2 tablespoons sour cream
2 tablespoons mayonnaise
1/2 cup chopped cilantro
Mix together in bowl, chill overnight. Serve with Doritos (I use the dipping kind)
